Almond & Fruit Cookies

Delicious almond & fruit cookies - enjoy guilt free (well almost!) with a hot cup of tea!


150g spelt flour

50g ground almonds

100g crushed almonds

75g coconut oil

80g sultanas

80g dried apricots

2 1/2 tbs chia seeds

1 tbs baking powder

75g agave syrup (or honey)

1/2 tsp cinnamon

1 egg


Preheat the oven to 180'c and line a baking tray with greaseproof paper.

Put the nuts in a plastic bag and crush them with a rolling pin to break them up.

Sift the flour into a bowl and add crushed nuts, ground almonds, melted coconut oil, dried fruit, chia seeds, agave syrup, baking powder and cinnamon. Beat 1 egg in a separate bowl and slowly add into other ingredients. Once well combined, roll a small amount of the mixture into a ball using your hands and press onto a baking tray leaving a gap between each cookie as the mixture will spread.

Bake for 8 minutes or until golden brown (watch them as they will burn easily). Leave to harden and cool.

They will keep in an airtight container for up to 3 days.
