The Wright Granola

Ingredients:

100g almonds (crushed) 400g flaked almonds 150g walnuts (crushed) 60g pumpkin seeds 250g steel cut oats (large ones) 2tbs cinnamon 4tbs coconut oil 50g puffed rice (optional) 3tbs agave nectar 4tbs coconut oil 80g sultanas 80g chopped fresh dates *Not exact quantities - just use what you have.

Method:

Preheat oven to 180'c. Line a baking tray with baking paper. Crush the almonds and walnut then add the other ingredients (except sultanas) and stir well until combine. Spread out on a baking tray (may need to do in 2 batches) and bake in oven until golden brown (10-15min). Keep checking it every few minutes and turn the mixture over to brown both sides. Just before it is ready sprinkle on the sultanas.

Allow to cool and put into jars. Will keep in airtight containers for a few weeks.

Use as a SPRINKLE for Greek Yogurt and berries at breakfast or as a snack.
